Definition of natural food colours

Monascus Colour
Monascus Colour is a red pigment obtained from the cultures of Monascus purpureus. It is soluble in water and relatively stable to heat and pH variation.
Gardenia Red
Gardenia Red is a red to reddish-purple pigment obtained by enzyme treating on a mixture of ester hydrolysates of iridoid compounds contained in gardenia fruits and protein decomposed substances. It is soluble in water and relatively stable to heat, light and pH variation.
Cochineal Extract
Cochineal extract is a pigment obtained from cochineal. Its principal component is carminic acid. It exhibits a reddish-orange shade at acidic pH, a red at neutral and a reddish-purple at alkaline. In Japan, a colour stabilizing agent (alum, organic salt and etc) is used to prevent discoloration.
Lac Colour
Lac Colour is a pigment obtained from the secretion of lac. Its principal component is laccaic acid. It exhibits a reddish-orange shade at acidic pH, a red at neutral and a reddish-purple at alkaline. In Japan, a colour stabilizing agent (alum, organic salt and etc) is used to obtain bright red shade.
Beet Red
Beet Red is a red pigment obtained from the roots of red beet. Its principal components are betanine and betacyanin. It is soluble in water, stable to pH variation and exhibits a bright red shade at neutral pH.
Red Radish (Anthocyanins)
Red Radish is a pigment obtained from the roots of red radish. Its principal component is anthocyanin. It exhibits a reddish-orange to red shade at acidic pH. It is soluble in water and relatively stable at mild acidic pH compared to other anthocyanins.
Grape Skin Extract (Anthocyanins)
Grape Skin Extract is a pigment obtained from grape skins. Its principal component is anthocyanin. It exhibits a red to reddish- purple shade at acidic pH. It is soluble in water and relatively stable to light and heat in acidic conditions.
Grape Juice (Anthocyanins)
Grape Juice is a pigment obtained from grapes. Its principal component is anthocyanin. It exhibits a red to reddish-purple shade at acidic pH. It is soluble in water and relatively stable to light and heat in acidic conditions.
Purple Sweet Potato Colour (Anthocyanins)
Purple Sweet Potato Colour is a pigment obtained from the tuberous roots of purple sweet potato. Its principal component is anthocyanin. It exhibits a purplish-red shade at acidic pH. It is soluble in water and relatively stable to light and heat compared to other anthocyanins.
Red Cabbage Colour (Anthocyanins)
Red Cabbage Colour is a pigment obtained from red cabbage leaves. Its principal component is anthocyanin. It exhibits a red to purplish-red shade at acidic pH. It is soluble in water and exhibits very bright red to purplish-red shade when used in acidic foods. Excellent stability to light and heat in acidic conditions.
Carthamus Red
Carthamus Red is a red to pink pigment in powder form obtained from safflower flowers. Its principal component is carthamine. It is insoluble in water and in oil. Excellent stability to light but sensitive to heat.
Paprika Colour
Paprika Colour is an orange to red pigment obtained from capsicum fruits. Its principal component is capsanthins. It is soluble in oil and exhibits relatively strong red shade compared to other carotenoids. Stable to pH variation and heat. Available in oil-soluble oleoresin and water-dispersible emulsion forms.
Annatto Extract
Annatto Extract is a yellow to orange pigment obtained from bixa seeds. Its principal components are bixin and norbixin. It is soluble in alkaline water but insoluble in water. Excellent stability to heat but sensitive to light.
Palm Oil Carotene
Palm Oil Carotene is a yellow to orange pigment obtained from oil palm fruits. Its principal component is carotene. It is soluble in oil but water-dispersible emulsion is the most common form. Stable to heat.
Marigold Colour
Marigold colour is a yellow pigment obtained from marigold flowers. Its principal component is xanthophylls. It is soluble in oil but water-dispersible emulsion is the most common form. Stable to heat.
Beta-Carotene
An orange-yellow pigment composed mainly of beta-carotene. It is stable to pH variation, heat and light. Available in water-dispersible emulsion and oil-soluble forms. This product is an artificial colouring.
Safflower Extract
Safflower Extract is a yellow pigment obtained from safflower flowers. Its principal component is safflower yellow (safflomin). It is soluble in water, stable to pH variation and excellent stability to light.
Curcumin
Curcumin is a yellow pigment obtained from the rhizomes of turmeric. Its principal component is curcumins. It is soluble in ethanol but insoluble in water. It exhibits a yellow shade at acidic and neutral pH and a reddish-brown at alkaline pH. Stable to heat but sensitive to light.
Gardenia Yellow
Gardenia Yellow is a yellow pigment obtained from gardenia fruits. Its principal components are crocin and crocetin. It is a rare water-soluble carotenoid. Excellent stability to heat but sensitive to light.
Gardenia Blue
Gardenia Blue is a blue pigment obtained by enzyme treating on a mixture of iridoid compounds contained in gardenia fruits and protein decomposed substances. It is soluble in water and relatively stable to heat, light and pH variation.
Tamarind Colour
Tamarind colour is a brown to reddish-brown pigment obtained from tamarind seeds. It is soluble in water and relatively stable to pH variation. Excellent stability to light and heat.
Caramel I
Caramel I is a brown pigment obtained by heating starch hydrolysates, molasses or food grade carbohydrates.

Please check whether the products are approved in the country concerned prior to usage.
●Usage
Please note that the change in colour and precipitation may occur due to following causes:
①pH value of the solution
②Existence of metals (especially iron)
③Existence of protein
Avoid using metal container as the products are easily affected by metals.
Keep the products containing flammable liquid away from fire.

Store products at prescribed temperature and out of heat and light
The powdered products are highly hygroscopic. Reseal the opened packaging immediately and tightly after use.
